1. Lightly warm up the pita bread in the oven until warm and soft.
2. Add lettuce, mint, basil, cucumbers, tomato and feta cheese to the middle of the pita bread.
3. Roast pine nuts in a frying pan for 2-4 minutes. Sprinkle on top of feta cheese.
4. Sprinkle balsamic vinegar over the filling.
5. Fold in half and enjoy!
