Mock Turkey Cutlets

1 block firm tofu
½ cup soy sauce, for dipping
1 tsp. poultry seasoning
½ cup yeast, for breading
¼ cup whole wheat pastry flour, for breading
Dash black pepper

1. Preheat oven to 425 degrees F.

2. Cut tofu into slices.

3. Mix nutritional yeast, poultry seasoning and whole wheat flour together.

4. Dip each piece of tofu in soy sauce, then into breading mixture and place on a lightly oiled non-stick baking sheet and bake for 10 minutes.

5. Turn tofu over, sprinkle with black pepper and bake for another 10 minutes until light golden brown.

6. Serve slices with Mock Turkey Gravy.
