Mediterranean Wrap Whole wheat pita bread ½ cup romaine lettuce ¼ cup fresh mint leaves ¼ cup fresh basil leaves 1 cucumber, cut length wise, into ½’’ thickness ½ tomato, chopped 1/3 cup feta cheese 1/3 cup roasted pine nuts 1½ - 2 tsp balsamic vinegar 1. Lightly warm up the pita bread in the oven until warm and soft. 2. Add lettuce, mint, basil, cucumbers, tomato and feta cheese to the middle of the pita bread. 3. Roast pine nuts in a frying pan for 2-4 minutes. Sprinkle on top of feta cheese. 4. Sprinkle balsamic vinegar over the filling. 5. Fold in half and enjoy! |
