Summer Rolls

1 pkg. rice paper
1 pkg. bean sprouts
A few sprigs of fresh mint, washed
2-3 green onions, finely chopped
2 carrots, shredded
1 block firm tofu, marinated with your favorite marinade

 


1. Place 2 rice papers at a time into a pie dish filled with very warm water.

2. After the papers soften, take them out and fill with ingredients.

3. Wrap end over, then side, making into a nice roll.

Peanut Sauce

½ cup smooth peanut butter
¼ cup honey
¼ cup tamari soy sauce
¼ cup fresh lemon juice

Combine ingredients together. Use this sauce for dipping Summer Rolls.
