Tofu Turkey

6 lbs. firm tofu
½ cup Nutritional yeast

Festive Holiday Stuffing:

1/3 cup olive oil
1 cup onions (chopped)
1 ¾  cup celery (chopped)
¾ tsp. sage
1 ½ tsp. thyme
1 tsp. Italian Seasoning
¾ tsp. black pepper
1 ¾ tsp. salt or to taste
1/3 cup diced apples
1/3 cup pine nuts (chopped)

12 cups whole wheat bread cubes
1 ¼ cup water


1. Preheat oven to 350 F.

2. Sautee all the Festive Holiday Stuffing ingredients except bread and water in a medium skillet until tender.

3. Meanwhile, place the bread cubes in a large casserole dish (with lid), add the sautéed mixture, drizzle water on top.

4. Place the lid on the dish and bake for 15-20 minutes. Prepare the Tofu Turkey.

Tofu Turkey:
One hour before cooking, place tofu in a colander and place a bowl underneath to catch the water from the tofu. Weigh it down with a heavy object such as a can or jar on top of a bowl or small plate.

1. Preheat oven to 400 F.  Mash up tofu very well and add nutritional yeast.

2. Line a colander with cheesecloth and press tofu on bottom and sides of colander. Make a hollow center, and fill with stuffing mixture. Place the extra tofu on top of stuffing to seal it in. Flip the tofu onto an oiled cooking sheet. Remove the cheesecloth or towel.

3. Baste the tofu with ¾ of the sesame oil and soy sauce mixture, cover with foil and bake. Cook for 1 hour basting every 20 minutes or until golden. Transfer to a serving platter and serve with gravy.
