HEAVENLY ANGEL HAIR PASTA
The total cooking time on this delicious dish is only 10 minutes!

1 pkg. Michelle’s Angel Hair Pasta (any flavor—they are all delicious)
1 med. tomato, chopped
1 head broccoli, chopped
6 leaves fresh basil, chopped
¼ C. pine nuts, toasted
2 Tbsp. Parmesan cheese (or non-dairy alternative)
2 Tbsp. olive oil
Salt and pepper to taste

1. Bring 1 gallon of water and a pinch of salt to a boil. Add the pasta and cook according to directions on package.
2. In a separate saucepan, boil 1/3 cup of water and add broccoli. Cover and turn down the heat to medium low. Cook 3 minutes, then remove from heat.
3. Toast pine nuts in the oven on medium broil until golden.
4. Arrange pasta on plates, drizzle with a little olive oil, then arrange the broccoli around the outside of the pasta.
5. Sprinkle tomatoes and basil on top and lightly salt and pepper.
6. Sprinkle with Parmesan and pine nuts and it’s ready to serve. Enjoy!
