GINGER LEMON DRESSING

1 Tbsp. grated ginger
2 lemons, juiced
1 tsp. Spike
½ tsp. salt
4 Tbsp. honey
¼ C. olive oil
1 ½ C. Veganaise (non-dairy eggless mayonnaise)

1. Blend everything until smooth, then refrigerate
2. Use on your favorite green salad. Some suggested greens are: red leaf lettuce; arugula; alfalfa sprouts; romaine lettuce; or gourmet salad mix.

Yield: approx. 2 cups
