LIQUID GOLD DRESSING
This is a recipe from “Becoming Vegan” by Vesanto Melina,
M.S., R.D. and Brenda Davis, R.D. Two Tbsp. of this dressing provides
3.8g of omega-3 fatty acids (your day’s supply, and then some)
along with 40% of your daily B12. This creamy and delicious dressing
is packed with riboflavin and other B vitamins. *For the lower fat option,
use less oil and more water.
¼* - ½ C. flaxseed oil
½ - ¾* C. water
1/3 C. lemon juice
2 Tbsp. balsamic or raspberry vinegar
¼ C. Braggs Liquid Aminos or tamari
½ C. nutritional yeast flakes
2 Tbsp. dijon mustard
1 tsp. ground cumin
1. Blend until smooth.
2. Dressing can be kept in a jar with a lid, refrigerated for 2 weeks.
Yield: 2 cups
