TAHINI GINGER MISO DRESSING
This recipe is adapted from “Conscious Eating,” by Gabriel
Coussens, M.D.
3 Tbsp. raw tahini (sesame seed butter)
½ C. water
1 tsp. fresh grated ginger
½ lemon, juiced, or 2 Tbsp. raw apple cider vinegar
1 clove garlic or 1/8 tsp. asafetida
1 tsp. mellow miso
1. Put all ingredients in a blender and blend until smooth.
2. For a spicier dressing, add ½ tsp. black pepper and ¼
tsp. cayenne.
Yield: 1 cup
