Festive Salad with BBQ Ranch Dressing

Ingredients

    Dressing
  • 1 cup vegan mayonnaise
  • ¼ cup soy milk
  • 1 garlic clove
  • 1 teaspoon onion powder
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Dash cayenne pepper
  • ⅛ cup BBQ sauce of choice

  • 2 cups kale, de-stemmed and roughly chopped
  • 1 celery stock
  • 1 cucumber, chopped
  • 2 grated carrots
  • ⅛ cup diced red onion
  • 1 head shredded Manoa lettuce
  • ½ cup chopped fresh cilantro
  • 1 cup cherry tomatoes
  • 1 cup diced jicama
  • ¾ cup cheddar cheese cubes
  • Juice of 1 lime

Instructions

  1. Combine all dressing ingredients in a food processor and process until smooth and creamy. Dressing can be stored in an air-tight container, refrigerated for up to a week.
  2. Place chopped kale in a large bowl. Massage kale by squeezing it in your hands until it begins to wilt. Drain off any excess juice.
  3. Combine kale and remaining ingredients, except lime juice, in a large serving bowl. Toss to combine.
  4. Pour lime juice over salad.
  5. Toss dressing into salad just before serving and enjoy!
