Green Pear Salad

This is a fall version of Vietnamese green papaya salad.
Tip: Use a melon baller to easily scoop out the core of the pear.

Ingredients

    Dressing
  • 1 garlic clove, minced
  • ⅓ cup lime juice
  • 3 Tablespoons soy sauce or liquid aminos
  • 2 Tablespoons brown sugar
  • ½-1 teaspoon chili paste, to taste

  • ¼ cup green onions, finely chopped
  • ¼ cup cucumber, finely chopped
  • ½ cup pear, finely chopped + 1 cup julienned
  • 2 cups mixed greens of choice
  • ¼ cup red onions, finely sliced
  • ½ cup carrots, julienned
  • 1 teaspoon lemon zest
  • 1 teaspoon sesame seeds
  • 1 teaspoon cilantro, chopped

Instructions

  1. In a small bowl, whisk all Dressing ingredients until garlic is broken down.
  2. Toss green onions, cucumber, and chopped pears into dressing.
  3. Place on top of mixed greens.
  4. Layer julienned pears, red onions and carrots on top.
  5. Sprinkle lemon zest, sesame seeds, and cilantro all over to garnish. Enjoy!
