BLACK-EYED PEA SALAD
I was amazed at how delicious soaked black-eyed peas are. I like to
just munch on them in between meals. I have also always loved making
papaya salsa and tomato salsa. I simply combined the black-eyed peas
with the salsa the other day and it was delicious.
1 C. black-eyed peas (see preparation directions below)
3 ripe papayas, peeled and cubed, or 4 tomatoes, finely chopped
1 red bell pepper, finely chopped
1 Maui or purple onion, finely chopped
1 med. Anaheim chili pepper, or whatever kind you like
2 Tbsp. jalapeno diced peppers
1/3 C. cilantro, finely chopped
3 Tbsp. lemon juice
1 clove garlic, diced, to taste
1 tsp. sea salt, to taste
1 tsp. cumin powder
1 tsp. chili powder
1. First, rinse and soak the peas in 3 times the amount of water for
6-8 hours. Drain and rinse and allow to sit on the counter for 8 to
12 hours. Now they’re ready to be eaten. The longer they keep
growing, the more their nutrition increases.
2. Combine all ingredients in a large bowl. Refrigerate to allow the
flavors to mix.
