MILLENIUM CAESAR SALAD
This is our version of the classic. The combination of capers and nutritional yeast gives this dressing the pungent bite and body that eludes many vegetarian Caesar dressings. If nutritional yeast is unavailable, add ¼ cup bread that has been soaked in water. This will help keep the dressing emulsified and thick.

3 heads Romaine lettuce, all but the very outermost leaves
1 ½ C. croutons
1 ½ C. Caesar dressing (recipe below)
1 carrot, peeled and shredded

1. Tear the lettuce leaves into bite-sized pieces. In a large bowl, toss the lettuce and croutons with the dressing.
2. Divide among 6 chilled salad plates and top with shredded carrot.

OIL-FREE CAESAR DRESSING

1-12.3oz. pkg. low-fat silken tofu
¾ C. fresh lemon juice
1 clove garlic, minced, or more to taste
3 Tbsp. capers, drained
¼ C. nutritional yeast
3 Tbsp. Dijon mustard
¼ tsp. ground pepper
1 C. water
Sea salt to taste

1. In a blender, puree all the ingredients until smooth. Taste and adjust the seasoning. Add more water if needed to reach the desired consistency.
2. Store in an airtight container in the refrigerator for up to one week.
