MINTED CORN SALAD
This is a healthy and refreshing salad that is very easy to prepare.
1-16oz. can whole corn
1-15 ½oz. garbanzo beans
2 tsp. brown rice vinegar
1 lemon, juiced
½ C. grated carrot (1-2 carrots)
¼ C. green onions, minced
1 Tbsp. dried mint, crumbled, or ¼ C. fresh mint, minced
Dash of sea salt
1. Toss all ingredients together, then chill. Enjoy!
Yield: 4 servings
