MOCK TUNA SALAD
You can serve this amazing salad as a side dish, on crackers,
in a sandwich, or on a salad.
½ lb. uncooked garbanzo beans
½ C. celery, diced
½ C. pickle relish
½ C. eggless mayonnaise (Veganaise has a delicious flavor)
½ tsp. sea salt
2 tsp. tamari
¼ C. nutritional yeast
1 tsp. kelp powder
1/8 tsp. asafetida
1/8 tsp. black pepper
1. Soak beans overnight. Rinse, drain and boil in filtered water until
tender, approximately 30 minutes. When they mash easily between fingers,
rinse and drain.
2. Mash well with a potato masher or run through a food processor or
Champion juicer.
3. Combine beans with remaining ingredients and mix thoroughly. Chill
in refrigerator until ready to serve.
