QUINOA SALAD
This refreshingly light salad can be served with Liquid Gold Dressing
(see recipe) or your own favorite dressing.
1 C. dry quinoa
¼ C. diced bell pepper, green or red
½ C. diced cucumbers
½ C. chopped parsley or cilantro
¼ C. diced tomatoes
1/8 C. chopped green onions
½ C. fresh sweet corn kernels
½ C. chopped avocado (optional)
1. Rinse quinoa in cold water using a colander or sifter.
2. Boil two cups of water, add quinoa, and bring back to a boil, boiling
for 3 minutes. Cover and simmer on low heat for about 15 minutes.
3. When done, fluff with a fork and cool. Transfer quinoa to a large
bowl and add the rest of the ingredients.
4. Add dressing according to taste.
Yield: 4 servings
