SPINACH SALAD WITH MISO
(& FLAX OIL) DRESSING
This recipe is from “Spectrum Essentials Easy & Delicious
Flax Recipes”
1 lb. spinach, without stems
1 sm. head romaine lettuce
1 sm. red onion
4oz. button mushrooms, washed and thinly sliced
½ C. frozen peas, thawed
¼ C. Spectrum Essentials (or other) flax oil
¼ C. water
1/8 C. honey or brown rice syrup
2 Tbsp. soy sauce
2 Tbsp. fresh lemon juice
2 Tbsp. barley miso
1 lg. clove garlic, minced
3 scallions, minced
Dash of cayenne
Handful of croutons
1. Wash greens, dry and tear leaves into a salad bowl.
2. Add red onion, mushrooms and green peas.
3. In a blender, mix all liquid ingredients for dressing; add miso,
garlic, scallions and cayenne.
4. Toss blended mixture gently with salad and serve at once. Garnish
with croutons.
Yield: 6 servings
