TABOULI SALAD

3 ½ C. fine bulgur
2 ½ C. boiling water
1/3 C. olive oil
½ C. fresh lemon juice
2 tsp. sea salt
3 cloves garlic, minced
1 tsp. black pepper
¾ C. minted parsley
1/3 C. fresh mint, minced
1 C. Roma tomatoes, diced (about 4)
¾ C. cucumber, diced

1. Add bulgur to boiling water, mix, cover and let sit for 30 minutes.
2. Thoroughly blend olive oil, lemon juice, sea salt, garlic and pepper in a blender or food processor. Pour over bulgur and mix well, breaking up clumps as you go.
3. Add fresh herbs and mix.
4. Add cucumbers and tomatoes and mix. Cool before serving.

Yield: 6 servings
