Raw Caesar Salad

Ingredients

  • 2 romaine lettuce hearts

  • Dressing
  • ¼ cup cashews, soaked 1-4 hours
  • ¼ cup raw pine nuts
  • 2 lemons, juiced
  • 2 Tablespoons cold pressed olive oil
  • 1 garlic clove
  • 1 teaspoon white miso
  • ½ teaspoon kelp granules
  • 1 date, pitted and soaked 1 hour
  • Sea salt and pepper to taste

  • Water
  • 3 Tablespoons nutritional yeast, or to taste
  • ½ cup macadamia nuts, finely chopped

Instructions

  1. Wash and chop lettuce. Place in a large bowl.
  2. In a blender or food processor combine dressing ingredients. Process until smooth and creamy, scraping sides with a spatula. Add water if needed to achieve desired consistency.
  3. Pour over romaine lettuce and toss. Garnish with nutritional yeast and macadamia nuts. Enjoy!
