Ingredients
- 1 bunch broccoli
- ¼ C. seasoned rice vinegar
- 1 tsp. stoneground mustard
- 1 clove garlic, pressed or minced
Instructions
- Break the broccoli into bite-sized florets. Peel the stems and slice them into ¼" thick rounds. Steam just until tender, about 5 minutes.
- While the broccoli is steaming, whisk the dressing ingredients in a serving bowl.
- Add the steamed broccoli and toss to mix. Serve immediately.
Variation: For a tasty salad, plunge the steamed broccoli into ice water until it is completely chilled, then toss it with the dressing.
Yields 4-6 servings
