Corn Rice Pilaf

This recipe is adapted from the North American Vegetarian Society's booklet, "Vegetarianism.A Diet for Life."

Ingredients

  • 3 Tbsp. raisins
  • ½ C. boiling water
  • 1 C. diced celery
  • 1 onion, chopped
  • 2-4 Tbsp. vegetable oil
  • ½ tsp. salt
  • 1 C. canned corn, drained (or frozen)
  • 4 C. cooked rice

Instructions

  1. Soak the raisins in boiling water to plump.
  2. In a deep skillet, sauté the onion and celery in oil for about 5 minutes.
  3. Add the salt and drained raisins. Cook for 2 minutes.
  4. Add corn and cooked rice and heat through. Toss lightly with a fork.

Yields 3-4 servings
