Nutty Vegetable Pilaf
1 Tbsp. vegetable oil
2 C. broccoli, coarsely chopped
2 med. carrots, julienned
1 med. onion, chopped
1 C. fresh mushrooms, sliced
2 cloves garlic, minced
½ tsp. thyme
½ tsp. basil
½ tsp. salt
¼ tsp. black pepper
3 C. cooked brown rice
½ C. pecans, chopped and toasted (bake at 350 degrees for 5-7 minutes)
½ C. grated Parmesan or non-dairy alternative (optional) |

1. Heat oil in a large skillet over medium-high heat until hot. Add broccoli, carrots and onion.
2. Cook and stir until broccoli and carrots are tender and onion is beginning to brown, about 5-7 minutes.
3. Add mushrooms, garlic and seasonings.
4. Add rice and pecans. Cook, stirring until thoroughly heated, 1-2 minutes.
5. Just before serving, sprinkle with cheese if desired.
Yield: 6 servings
