BAKED BASIL-EGGPLANT DELIGHT
This recipe is easy and delicious!
1 lg. round eggplant, sliced ¼”- ½” thick
2 lg. ripe tomatoes, sliced or ¾ cup pasta sauce
1 bunch fresh basil leaves
Olive oil
Braggs liquid aminos
Grated cheese or cheese alternative
Dash of dried oregano
1. Squirt Braggs on both sides of the eggplant slices and lightly spread
a little olive oil on each slice.
2. Top each with fresh basil leaves.
3. Place tomato slices over basil. If you use pasta sauce instead, spoon
it on first and then the basil.
4. Top each with grated cheese or cheese alternative.
5. Sprinkle a little dried oregano or basil on top.
6. Place slices in a baking dish and bake at 375 degrees for about 20-25
minutes or until eggplant is tender and easy to cut sides with a fork.
