BROCCOLI WITH FAT-FREE DRESSING
This recipe is from “Fat-free and Easy,” by Jennifer Raymond.
1 bunch broccoli
¼ C. seasoned rice vinegar
1 tsp. stoneground mustard
1 clove garlic, pressed or minced
1. Break the broccoli into bite-sized florets. Peel the stems and slice
them into ¼” thick rounds. Steam just until tender, about
5 minutes.
2. While the broccoli is steaming, whisk the dressing ingredients in
a serving bowl.
3. Add the steamed broccoli and toss to mix. Serve immediately.
Variation: For a tasty salad, plunge the steamed broccoli into ice
water until it is completely chilled, then toss it with the dressing.
Yield: 4-6 servings
