CORN RICE PILAF
This recipe is adapted from the North American Vegetarian Society’s
booklet, “Vegetarianism…A Diet for Life.”
3 Tbsp. raisins
½ C. boiling water
1 C. diced celery
1 onion, chopped
2-4 Tbsp. vegetable oil
½ tsp. salt
1 C. canned corn, drained (or frozen)
4 C. cooked rice
1. Soak the raisins in boiling water to plump.
2. In a deep skillet, sauté the onion and celery in oil for about
5 minutes.
3. Add the salt and drained raisins. Cook for 2 minutes.
4. Add corn and cooked rice and heat through. Toss lightly with a fork.
Yield: 3-4 servings
