CURRIED VEGETABLES
2 C. cubed potatoes
1 C. cubed carrots
1 can garbanzo beans
1 C. chopped onions
1 C. peas
1 C. water
3 tsp. Patak’s mild curry paste
1 can coconut milk
½ tsp. salt
1 tsp. oil
½ block firm tofu, cubed
1. Heat the oil in a large saucepan on medium-heat heat.
2. Add the onion and sauté for a minute.
3. Add the potatoes and carrots. Add water and let boil until potatoes
start to get soft.
4. Add coconut milk, salt, curry paste, peas and garbanzo beans.
5. Let simmer until vegetables are cooked.
6. Add cubed tofu at the end before serving.
