EASY TARTS WITH FETA FILLING
These crispy baked bread tarts filled with feta cheese and topped with mozzarella are impressive, easy to make, and not to mention delicious!

12 pieces whole grain bread
½ C. butter, melted
6 oz. feta cheese
2 C. grated mozzarella (optional)
6 cherry tomatoes, diced
10 pitted black olives, cut into quarters
3 Tbsp. olive oil
2 tsp. balsamic vinegar
2 tsp. whole-grain mustard
½ tsp. fructose
Salt and pepper
Parsley sprigs to garnish

1. Cut crusts off the bread and cut them into squares.
2. Brush with butter and fold into muffin tins. Bake at 375 degrees for about 10 minutes or until crisp and brown.
3. Meanwhile, mix together the remaining ingredients (except the parsley).
4. Add the mixture to the “tarts” and cover with mozzarella, baking until cheese is melted.
5. Garnish with parsley and enjoy!
