HAWAIIAN SWEET YAMS

4 med. yams or sweet potatoes
1 C. fresh pineapple, diced well
½ tsp. sea salt
Dash of black pepper

1 C. whole-wheat bread crumbs
¼ C. Hain margarine or olive oil
3 Tbsp. sucanat or maple syrup
½ tsp. cinnamon
¼ tsp. cloves
¼ tsp. nutmeg

1. Wash and slice yams and put in boiling water to cook. Cook until tender enough to mash, about 8 minutes.
2. Drain and mash. Mix in the pineapple and spices.
3. Put yams in a lightly oiled casserole dish.
4. Combine last ingredients and mix well. Sprinkle evenly over the yams.
5. Bake at 375 degrees for about 25 minutes.

Yield: 6 servings
