ITALIAN GREEN BEANS
This recipe is adapted from “Holiday Recipes with a Vegetarian
Twist.”
1 ½ lbs. fresh green beans, trimmed
1 Tbsp. olive oil
1 lb. tomatoes, chopped
2 lg. cloves garlic, minced
1 Tbsp. fresh basil, chopped or 1 tsp. dried basil
1 tsp. sea salt
Dash of ground pepper
1. Break or cut green beans into bite-sized pieces. Steam until tender.
2. Immerse in cold water, drain and set aside.
3. Heat oil in a large skillet and add the tomatoes and garlic. Simmer
over medium heat about 5-8 minutes.
4. Add beans and basil and cook 5-8 minutes longer, stirring occasionally.
Add salt and pepper to taste.
5. Optional: sprinkle Parmesan cheese or non-dairy substitute on top
of each serving. You can also add some slivered almonds in the last
few minutes.
Yield: 6 servings
