LOMI TOMATO
This is a vegetarian version of “Lomi Salmon,” which is a standard modern Hawaiian lu’au food. People are surprised at how god this is but they shouldn’t be. Why? Because these days there is not much salmon in the Lomi Salmon anyway and people still like it. So why not try it without the salmon and thus eliminate the cholesterol.

5 tomatoes, diced
8 green onions, thinly sliced
1 med. onion, finely chopped
1-2 Tbsp. apple cider vinegar
1 tsp. Hawaiian salt
3-5 drops Tabasco sauce
Arame—soak in warm water and drain (optional)

1. Combine all ingredients and chill thoroughly.

Yield: 8 servings
