RICE PILAF #2
This rice is a great accompaniment to any stir-fry and
can be made with green or red peppers to add color.
2 Tbsp. extra virgin olive oil
½ C. crimini mushrooms, chopped (about 5 mushrooms)
¼ Spanish onion, chopped
1 celery stalk, peeled and chopped
1 C. brown rice
2 ½ C. vegetable stock or water
Salt and pepper to taste
1. In a medium-sized skillet, add the oil, onion and celery and sauté
for about 3 minutes.
2. Add mushrooms and sauté another minute.
3. Add rice and water/stock.
4. Add seasonings, stir once and cover. Cook on medium heat for about
30 minutes. Liquid should be absorbed and the rice should be tender.
Stovetop temperatures vary, so keep boiling water on hand in case you
need to add towards the end of the cooking process.
