SPANISH RICE
This recipe is from “Vegetarianism—Answers to the Most
Commonly Asked Questions.”

4 stalks celery, diced
1 sm. onion, chopped
1 green pepper, diced
2 cloves garlic
1 Tbsp. vegetable oil
1 tsp. each: basil, chili powder, cumin, salt
½ tsp. oregano
¼ tsp. paprika
1 C. tomatoes, chopped
3 C. warm, cooked brown rice

1. Sauté celery, onion, pepper and garlic in oil until tender.
2. Add seasonings and tomatoes. Cook until tomatoes are soft.
3. Stir in rice.
