STEAMED KANEOHE FERN SHOOTS WITH LOW-FAT TANGY & CREAMY
GREEN ONION SAUCE
A.k.a.--Ho’io, Warabi, Paco, Fiddlehead Fern
1 lb. fresh fern shoots, cut into 1-inch bite-sized pieces, soaked
and washed thoroughly
½ C. non-fat plain yogurt or plain soy yogurt
½ C. eggless mayonnaise
1 Tbsp. fresh lemon juice
2 tsp. Dijon mustard
1 Tbsp. Bubbie’s horseradish, or your favorite
3 Tbsp. green onion, finely chopped (scallion)
1. Steam fern shoots for 1-3 minutes, or until they are crisp-tender
(al dente).
2. Transfer them with a slotted spoon to a bowl of ice and cold water
to stop the cooking. Then transfer them to paper towels to drain.
3. In a small bowl, whisk together the yogurt, eggless mayonnaise, lemon
juice, mustard, horseradish, green onion and salt and pepper to taste,
whisking until sauce is smooth.
4. Serve steamed fern shoots topped with this awesome sauce. So “Ono”!
Yield: 4-6 servings
