Sushi Rolls

2 cups sushi rice
4 cups water
4 Tbsp. rice vinegar
2 tsp. gomassio (sea salt and toasted, crushed sesame seeds)
¾ cup soy sauce
3 tsp. fresh ginger, grated
Tofu, cut into strips
Carrots, grated
Avocado

6 nori sheets

 


1. Wash rice in a colander under running water. Place rice and water in medium saucepan and bring to a boil. Cover the saucepan and turn the heat down to very low. Let cook for 20 minutes.

2. Once the rice is cooked, transfer it to a large bowl and add the vinegar and gomassio.

3. In a medium sized bowl, combine soy sauce and ginger. Place tofu strips in sauce and let marinate for 30 minutes.

4. Lay a sheet of nori down and press the rice onto ¾ of the sheet. Place the tofu strips, grated carrot, and avocado on top.

5. Roll the sushi up and cut into ½’’ rounds.

6. Use the leftover soy sauce mixture to drizzle on top of sushi.
