1. Preheat oven to 425 degrees.
2. Place wedged potatoes into a large bowl. Pour olive oil over potatoes and mix until each piece is coated.
3. Place on an oiled cookie sheet and bake until tender, approximately 40 – 50 minutes.
4. About 5 minutes before they are ready to pull out of the oven, sprinkle with salt, pepper and nutritional yeast.
