Tofu Crunch Popcorn

This recipe was featured at our Kahului Cooking Class: Movie Night (8/2/11).

The Vega Antioxidant EFA Oil Blend can be found in the Wellness Department of any Down to Earth store. This versatile oil is naturally rich in Omega-3s and Omega-6s. It also has an impressive array of other good fats, antioxidants, and phyto-nutrients.

Ingredients

  • 1 (10-ounce) container extra firm tofu
  • 2 Tablespoons safflower oil
  • 2 teaspoons turmeric
  • ⅓ cup soy sauce
  • 1 Tablespoon gamasio + 3 Tablespoons
  • ½ cup yellow popcorn kernels
  • 5 Tablespoons Vega Essential Fatty Acid Oil
  • 2 nori sheets, crumbled
  • Special Materials: Air popper

Instructions

  1. Preheat oven to 350°.
  2. Drain tofu and cut into tiny ½" pieces.
  3. Combine safflower oil, turmeric, soy sauce and 1 Tablespoon gamasio with tofu in a glass baking dish.
  4. Bake 45 minutes, stirring every 15 minutes.
  5. Let tofu cool, and save for popcorn topping.
  6. Use air popper to pop the popcorn into an extra-large bowl.
  7. Add EFA oil, remaining gamasio, crumbled nori sheets and tofu mixture. Combine well. Share with your friends and enjoy a movie night!
