VERY SIMPLE POTATO LEEK SOUP
1 large leek, cleaned
½ C. Mock Chicken Broth powder,
mixed with 6 C. water
2 t. onion powder
4 med. Potatoes
½ t. black pepper
1. Cut leeks in half lengthwise and slice thin. Cube potatoes. If using
organic potatoes leave the skin on and if inorganic peel them.
2. Bring leeks and broth to a boil. Cover and simmer 10 minutes. Add
potatoes and onion powder and return to a boil. Cover and simmer for
20 minutes, or until potatoes are tender.
3. Now, blend half the soup in a blender and leave the other half chunky.
Add black pepper and stir together. This soup is even better the next
day, after the flavors have harmonized. |
