Very Simple Potato Leek Soup

Ingredients

  • 1 large leek, cleaned
  • ½ cup Mock Chicken Broth powder, (mixed with 6 cups water)
  • 2 tsp. onion powder
  • 4 med. Potatoes
  • ½ tsp. black pepper

Instructions

  1. Cut leek in half lengthwise and slice thin. Cube potatoes. (If using organic potatoes leave the skin on and if inorganic, peel them).
  2. Bring leek and broth to a boil. Cover and simmer 10 minutes.
  3. Add potatoes and onion powder and return to a boil. Cover and simmer for 20 minutes or until potatoes are tender.
  4. Blend half the soup in a blender and leave the other half chunky. Add black pepper and stir together.

Note: This soup is even better the next day, after the flavors have harmonized.
