Fluffy Sweet Potato Biscuits

An easy-to-make alternative to traditional biscuits, and a great way to use up leftover mashed potatoes.

  • 2 cups all-purpose flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup mashed sweet potatoes
  • ¼ cup vegan butter
  • ¾ cup almond milk


  1. Preheat oven to 375̊.
  2. In a medium mixing bowl, combine flour, baking powder, and salt.
  3. Create a well in the center of the dry ingredients and add mashed sweet potatoes, vegan butter, and almond milk. Mix until combined.
  4. Scoop batter onto a lined baking sheet, one Tablespoon at a time. Bake for 8-10 minutes, until golden brown.
