Raw Beet Sashimi

Use beets as a delicious raw vegan sushi snack. It’s also a great starter to any meal, as it is light and tasty!

  • 1 beet, sliced thinly
  • 3 Tablespoons tamari
  • 3 Tablespoons sesame oil
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1-2 Tablespoons maple syrup
  • 1-2 Tablespoons grated ginger
  • 2 Tablespoons gomasio
  • ½ cup diced green onion


  1. Using a mandolin, slice beets very thin and place in a large bowl.
  2. Toss with tamari, sesame oil, zest, lemon juice, maple syrup and ginger.
  3. Place on serving dish and sprinkle with gomasio and green onions. Serve and enjoy!
