Rainbow Overnight Oats

Ingredients

  • 2 cups old fashioned rolled oats
  • 2 cups non-dairy milk of your choice
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • ½ teaspoon cardamom

Toppings:

  • Pomegranate seeds or raspberries
  • Golden raisins or mulberries
  • Mango, sliced
  • Kiwi, sliced
  • Blueberries
  • Maple syrup or agave

Instructions

  1. In a large mason jar, combine oats, non-dairy milk, vanilla, cinnamon, and cardamom. Mix until combined.
  2. Refrigerate at least 6 hours.
  3. Serve ½ cup of oats, topped with pomegranate seeds or raspberries, golden raisins or mulberries, sliced mango, sliced kiwi, blueberries, and maple syrup or agave. Enjoy!
