Rainbow Overnight Oats

Turn plain oats into a gorgeous, nutritious breakfast with dried and fresh fruit!

Ingredients
- 2 cups old fashioned rolled oats
- 2 cups non-dairy milk of your choice
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- ½ teaspoon cardamom
Toppings:
- Pomegranate seeds or raspberries
- Golden raisins or mulberries
- Mango, sliced
- Kiwi, sliced
- Blueberries
- Maple syrup or agave
Instructions
- In a large mason jar, combine oats, non-dairy milk, vanilla, cinnamon, and cardamom. Mix until combined.
- Refrigerate at least 6 hours.
- Serve ½ cup of oats, topped with pomegranate seeds or raspberries, golden raisins or mulberries, sliced mango, sliced kiwi, blueberries, and maple syrup or agave. Enjoy!
