Chipotle Enchilada Sauce

This chunky tomato based sauce is tasty, slightly spicy and very easy to make.

4-5 Cups
Ingredients
- 1 Tablespoon safflower oil
- 4 cloves garlic, minced
- 2 (15-ounce) cans tomato sauce
- 1 (15-ounce) can diced fire roasted or Mexican style tomatoes
- 1-2 teaspoons canned chipotle pepper, minced
- 2 Tablespoons taco seasoning
- 1 Tablespoon vegan imitation chicken broth powder
- 2 teaspoons dried oregano
- Salt and pepper to taste
Instructions
- Heat a large sauté pan over medium heat. Add oil and garlic and sauté about 1 minute, taking care not to burn the garlic.
- Add all other ingredients, stirring until sauce begins to bubble.
- Lower heat and simmer 5-10 minutes or until thickened. Season with salt and pepper if desired.
- Use to top your favorite enchiladas or burritos. Enjoy!
