Thai Coconut Tapioca

This homemade version of one of the most popular treats from the Down to Earth Deli is a snap to make. This light but luxurious goodie is great to help you cool down on a hot day. Not too sweet so you can enjoy as a snack, dessert, or even breakfast. It's definitely a great dessert to have here in Hawaii.

Thai Coconut Tapioca | Down to Earth Hawaii Cooking | Plant-Based Recipes


  • 1 cup coconut cream
  • 3 cups water
  • ½ cup small tapioca pearls
  • ½ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • Toasted coconut flakes for garnish (optional)
  • Fresh fruit for garnish (optional)


  1. Combine coconut cream and water in a medium saucepan. Cook on medium-low until just before the milk comes to boil.
  2. Add the tapioca pearls and stir often for 12 minutes or until pearls become translucent.
  3. Remove from heat and add maple syrup, and vanilla extract.
  4. Pour into serving bowls and let cool in the refridgerator for at least 20 minutes. Pudding will thicken as it cools.
  5. Serve with toasted coconut or fresh fruit garnish. Enjoy!
