Roasted Red Pepper Hummus

Hummus is so versatile. you can use it as a dip or as a sandwich spread. The roasted bell peppers and spices added kick make this hummus truly addicting!
Yield
1 - 1½ Cups
Ingredients
- 1 cup roasted red peppers
- 1 (15-ounce) can garbanzo beans, rinsed & drained
- 1 Tablespoon tahini
- 1 Tablespoon lemon zest
- ¼ cup lemon juice
- 1-2 garlic cloves
- ½ teaspoon cumin
- ½ teaspoon cayenne
- Salt and pepper, to taste
- Olive oil or water
Instructions
- Combine all ingredients, except for olive oil, in a food processor. Pulse until blended. You may need to stop a couple of times to scrape down the sides of the processor. Drizzle in olive oil if needed to achieve a creamy consistency. Serve immediately or refrigerate for up to a week. Enjoy!
