Bow Tie Pasta w/ Edamamde and Lemon Basil Crème Sauce

Ingredients
- 5 cups bow tie pasta
- 3 Tablespoons safflower oil
- 1 cup diced white onion
- 5 cloves garlic, minced
- 1 cup diced fresh basil
- 3 Tablespoons vegan butter
- 3 cups soy milk
- Juice of 2 lemons
- 3-4 Tablespoons unbleached all-purpose flour
- 4 Tablespoons vegan parmesan cheese 1 (12-ounce) bag of edmame, defrosted
Instructions
- Cook pasta according to package directions. Set aside.
- Place oil in a large skillet on medium heat.
- Add onions, and cook until translucent.
- Add garlic and cook for 3-5 minutes.
- Add basil and butter, stirring until butter melts.
- Add soy milk, and reduce heat.
- Slowly add lemon juice, stirring to help prevent curdling.
- Stir in flour 1 Tablespoon at a time until sauce thickens.
- Continue to stir and add vegan parmesan cheese, edmame and pasta. Raise heat to medium and simmer for 5 minutes. Serve immediately. Enjoy!
