Bow Tie Pasta w/ Edamamde and Lemon Basil Crème Sauce

  • 5 cups bow tie pasta
  • 3 Tablespoons safflower oil
  • 1 cup diced white onion
  • 5 cloves garlic, minced
  • 1 cup diced fresh basil
  • 3 Tablespoons vegan butter
  • 3 cups soy milk
  • Juice of 2 lemons
  • 3-4 Tablespoons unbleached all-purpose flour
  • 4 Tablespoons vegan parmesan cheese 1 (12-ounce) bag of edmame, defrosted


  1. Cook pasta according to package directions. Set aside.
  2. Place oil in a large skillet on medium heat.
  3. Add onions, and cook until translucent.
  4. Add garlic and cook for 3-5 minutes.
  5. Add basil and butter, stirring until butter melts.
  6. Add soy milk, and reduce heat.
  7. Slowly add lemon juice, stirring to help prevent curdling.
  8. Stir in flour 1 Tablespoon at a time until sauce thickens.
  9. Continue to stir and add vegan parmesan cheese, edmame and pasta. Raise heat to medium and simmer for 5 minutes. Serve immediately. Enjoy!
