Cauliflower Fried "Rice"

Chopped cauliflower is a great base for this grain-free "rice" meal. This can also be eaten raw for wraps or pilafs.

Ingredients
- 3 cups roughly chopped cauliflower
- ½ cup raw cashews
- Pinch each salt and pepper
- 2 Tablespoons peanut oil
- ½ cup thinly sliced red onion
- 1½ cups thinly sliced cabbage
- 1 cup thinly sliced red bell pepper
- 1 cup shredded carrots
- ½ cup chopped green onion
- 1 Tablespoon soy sauce
- 1 Tablespoon mirin
Instructions
- In a large skillet, heat peanut oil until warm. Add onions and cook until browned. Add cabbage, peppers, carrots, and green onion and sauté for 5-10 minutes until vegetables are tender.
- Add cauliflower mixture, soy sauce, and mirin. Stir until combined and warmed through.
- Serve in wraps, or alongside other vegetables for a grain-free meal! Enjoy!
