Easy Eggless Quiche
Ingredients
- Vegetable oil to coat pan
- 1 cup chopped mushrooms
- 1 cup chopped onion
- 1 cup chopped broccoli
- 1 Tablespoon turmeric
- 1 teaspoon dried basil
- 1 Tablespoon garlic powder
- Salt and pepper to taste
- ½ cup vegetarian bacon bits
- 3 Tablespoons water
- 1 package firm tofu
- ¼ cup ricotta cheese
- 3 Tablespoons vegetable broth
- 1 teaspoon turmeric
- 1 pre-made pie crust
- 1 cup grated pepper jack cheese
- 1 cup grated Provolone cheese
- Olive oil
Instructions
- Preheat oven to 425°.
- Heat oil in a sauté pan over medium-high heat. Add mushrooms and onions. Cook until caramelized.
- Add broccoli, seasonings, vegetarian bacon bits and water. Cook until broccoli softens. Remove from heat and set aside.
- Combine tofu, ricotta, broth and turmeric in a food processor. Process until mixture is smooth and creamy.
- Combine sautéed items and tofu mixture in a large bowl and mix well.
- Fill pie crust with mixture.
- Sprinkle top with grated cheeses and drizzle with olive oil.
- Place in the center of a baking sheet. Bake for 30 minutes or until golden brown. Enjoy!
