Pear & Red Onion Pizza

Ingredients
- Whole wheat flour
- 1 prepared pizza crust of choice
Pickled Onions
- ½ red onion, thinly sliced
- 1 teaspoon salt
- 2 Tablespoons water
- Juice of ½ a lime
Pizza Toppings
- ½ cup extra virgin olive oil
- 4-6 cloves garlic, minced
- ¼ cup sliced olives
- ¼ cup capers with juice
- 1 Tablespoon dried rosemary
- Salt and pepper to taste
- 1 Tablespoon white miso
- 1-2 pears, sliced into wedges
- ¼ cup pine nuts or sliced almonds (optional)
- ¼ cup crumbled feta cheese (optional)
Instructions
- Preheat oven to 500°. Dust a large baking sheet with flour. Place prepared pizza crust on baking sheet and set aside.
- Prepare Pickled Onions: Seperate onion slices, cover with salt and water in a small bowl. Let sit for about 15 minutes. Massage onions for 2-3 minutes. Drain. Squeeze any excess moisture from the onions and return to bowl. Pour lime juice over onions. Set aside.
- Meanwhile, heat oil in a large skillet over medium heat. Add garlic, olives, capers, rosemary, salt and pepper. Saute for 3-5 minutes or until garlic is softened and fragrant. Remove from heat. Whisk in miso until incorporated.
- Spoon about half of garlic mixture onto pizza crust. Top with pickled onions, pear slices, and pine nuts. Drizzle remaining garlic mixture over entire pizza.
- Bake for 10-15 minutes or until crust is golden brown. Top with feta cheese. Let cool before cutting. Serve and enjoy!
