Soba Curry

Ingredients
  • 1 (8-ounce) package soba noodles
  • 1 Tablespoon vegetable oil
  • 2 cups diced onion
  • 3 large carrots, cut into ½” thick half moons
  • 2½ teaspoons curry powder
  • 2 cloves garlic, minced
  • 3½ cups vegetable broth
  • 2 cups cubed sweet potatoes
  • 1 small apple or pear, cored and grated
  • 3 Tablespoons ketchup
  • 1 Tablespoon vegetarian Worcestershire sauce
  • 1 Tablespoon miso
  • 1-2 Tablespoons honey or agave
  • 1 cup peas
Instructions
  1. Cook soba noodles according to package directions.
  2. Heat oil in a large pot over medium heat. Sauté onions 8-10 minutes or until they begin to brown.
  3. Add carrots and sauté for 5 minutes. Stir in curry powder and garlic, and cook 1 minute or until fragrant.
  4. Add broth, potatoes, apple, ketchup, Worcestershire sauce and miso. Bring to a simmer. Reduce heat to medium-low and cook for 30 minutes or until potatoes are tender.
  5. Drizzle honey on top and mix in peas. Serve on top of soba. Enjoy!
