Soba w/ Mushroom Sauce

Ingredients
  • 1 (8-ounce) package soba noodles
  • 1 Tablespoon safflower oil
  • 2 cups sliced mushrooms
  • 1-2 Tablespoons water
  • 2 cups unsweetened plain almond milk, divided
  • 2 Tablespoons nutritional yeast
  • 2 Tablespoons non-dairy plain creamer
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • 2-3 Tablespoons fresh chopped herbs like parsley, dill, rosemary, or basil
Instructions
  1. Cook soba noodles according to package directions.
  2. Heat oil in a large skillet over medium heat. Add mushrooms and water. Sauté for about 8-10 minutes or until very soft.
  3. Stir in 1 cup almond milk. Bring to a simmer and let cook for a couple of minutes.
  4. Stir in nutritional yeast, non-dairy creamer, and remaining cup of almond milk. Let cook for a few minutes.
  5. In a small bowl, whisk together cornstarch and water to make a slurry paste.
  6. Add slurry to sauce and mix well to combine. Simmer for 3-5 minutes or until thickened.
  7. Divide noodles among serving plates. Ladle mushroom sauce on top. Top with fresh herbs and enjoy!
